Sunday’s are my big day of meal prepping for the week. Sometimes its a quick prep and other days it takes almost the entire day depending on what I am making. This week I decided to stay simple. Wednesday, I will be hopping on a bus to NYC for Lindsey Stirling’s Wanderland tour (this will be my 5th time seeing her, and 2nd winter tour…not in love with her or her music at all😂). The trip is 6 hours from New Hampshire to NYC 🙄 — therefore I am bringing plenty of food. And I’ll be heading back Thursday mid-day = packing 2 days worth of food.
My goal is to avoid eating out as much as possible, partially because I am on prep and also I really do not want to spend a ton of money on my barely 2 day trip.
Meal prep was pretty quick and easy, I think I had it done in about 2 hours. My 1st meal is the same as always — 1 egg, 2/3c egg whites, veggies, low-fat cheese, and either oats or Ezekiel bread French toast.
Then the rest as follows…
- Meal 2 – 1 apple, 2tbsp peanut butter, 4oz deli meat
- Meal 3 – 4oz ground turkey, 100g wild rice, 80g broccoli
- Meal 4 – 6oz nonfat Greek yogurt, 8g pudding mix, 25g muesli, 1tbsp almond butter
- Meal 5 – 4oz chicken, 100g veggie mix (cauliflower, zucchini, squash), 3oz sweet potato
- Post-Workout – 1 scoop MyProtein Salted Caramel (amazing), 1 banana, 2tbsp powdered PB (I’ve been using PBfit).
Traveling will also pose a bit of a problem with training this week. I’m definitely getting in my Monday/Tuesday training, but Wednesday I won’t be able to workout before getting the bus and there is no way I’m getting up at 3am to workout before my first client at 5:30am…I’m not that crazy.
I’ve been looking at some gyms around my hotel and there are a lot…its NYC after all. I think I’ve decided on one — it’s right next to my hotel and seems to have the cheapest day pass. If I don’t end up making it to the gym, I’ll just get a quick hotel room workout in.
Anyways, I can’t wait for this show on Wednesday and to visit the city. I haven’t been in 8+ years so this will be fun and I’ll get to see 2 of my hometown best friends in the process!
